Description
The grapes come from 10-30 year-old espalier vines. They produce medium-sized bunches of spherical, intensely colored grapes. The pulp is rich in minerals and sugars (23-25%), and the skins are thin and high in anthocyanins and tannins.

Winemaking
The grapes, harvested by hand in late October, are immediately transported to the winery in 18-kg crates and destemmed. Fermentation, initiated with indigenous yeasts selected in the vineyard, takes place at a constant temperature of approximately 27°-28°C for 15 days. Maceration on the skins lasts 15 to 60 days, depending on the tank. After racking, the wine is aged in 5- and 15-hl oak barrels, none of which are new. Malolactic fermentation, which begins spontaneously, lasts approximately 13 days. Aged for 30 months, at least 24 of which in wood. The wine is blended in stainless steel and bottled without filtration in July.
Tasting
A wine with an intense ruby red color, it appears quite consistent. The nose is rich and persistent with notes of crisp red fruit, floral elements, and hints of graphite, with a light spice. The palate is warm, with soft tannins that blend well into the body of the wine, without being overly dry. Its freshness gives the wine liveliness and ensures its longevity. The aftertaste recalls aromatic and balsamic herbs.
Pairings
It is certainly a wine for rich and unctuous foods based on meat, game, and winter dishes typical of mountain cuisine, it also pairs well with mature cheeses.
