Planting density: 3,000 plants/ha – Average age of the vineyard: 20 years. Soil : Vineyards located at 550/600 m above sea level. Clayey, calcareous, sandstone soil rich in volcanic deposits. Company management: Organic for 20 years. Harvest : Grapes are vigorously hand-picked with the utmost care in small 20 kg crates. Harvest period: Early November. Vinification : 25 days in 50 hl oak conical barrels. Maturation : Aged for 24–36 months in 50-hl oak barrels. This is followed by a long period of bottle aging. Color : Ruby red with garnet reflections. Aroma : Intense and complex on the nose, with persistent balsamic notes, wild berries, rose hips, smoke, black cherry, violet, hints of undergrowth bark, dark spices, velvety and elegant tannins. Taste : Full-bodied and dynamic, richly fresh, with lively and pleasant tannins and a good flavour. It leaves wild notes on the palate and has an excellent persistence. Pairing : Roast red meat, game, hard or mature cheeses. Alcohol content: 14% vol.
