The Perillo winery by Michele Perillo is a small company in the municipality of Castelfranci and in 2024 it introduced its Irpinia Aglianico DOC wine onto the wine market. The company extends over 7 hectares of property between the municipalities of Castelfranci and the municipalities of Montemarano.

Training system: Spurred cordon on 15/20 year old vines
Production per hectare: 45q per hectare
Harvest : first week of November
Vinification : Pre-fermentation maceration of the grapes at cold temperatures for about 2 days, followed by fermentation. Fermentation takes place in stainless steel tanks at an uncontrolled temperature for about 15 days.
Aging : In wood for 6 months in Slovenian oak barrels
Bottle aging: 1 year
Color : Ruby Red
Aroma: On the nose it offers a broad, complex, intense bouquet with characteristics reminiscent of cherry, thyme, violet, and berries with mineral hints.
Taste : In the mouth it is enveloping, elegant and persistent. The aftertaste is characterized by strong notes of plum, bitter cherry, strawberry jam, black pepper.
