Irpinia Campi Taurasini DOC “ Sallù ” is a wine with an intense ruby red color that enchants at first sight. On the nose it offers a rich and enveloping bouquet with fruity notes of cherry and black cherry, embellished with a light spicy touch. On the palate it stands out for its fullness and harmony, offering a taste of great structure and complexity. The finish is long and persistent, with a lasting impression. A perfect wine to accompany red meat dishes and mature cheeses, ideal for moments of pure pleasure.
PRODUCTION AREA: Montemarano (Av), Irpinia, Campania.
GRAPES: Aglianico 100%.
VINEYARDS: Aglianico trained using the spurred cordon system on clayey and calcareous soil with a density of approximately 3,000 plants per hectare.
HARVEST TIME: Beginning of November, manual in crates.
VINIFICATION: Maceration for 20 days and fermentation at an uncontrolled temperature with two daily pumping overs.
REFINEMENT and MATURATION: Refinement and maturation for 12 months in 3rd/4th passage barriques and subsequently (assembly) in steel tanks before completing the refinement in the bottle for 6 months.
ORGANOLEPTIC CHARACTERISTICS: Ruby red color, intense aroma, with hints of cherry, black cherry, slightly spicy, full and harmonious to taste.
FOOD PAIRINGS: First and second courses based on elaborate red meat and mature cheeses.
SERVING TEMPERATURE: It should be served at a temperature of 16°-18° C.
