Dedicated to those who are no longer with us.  Rinascita is the first Classic Method Spumante from Vini Contrada, created during a difficult time in our lives and for everyone due to the Covid-19 pandemic. It has hit our family and loved ones hardest, and it is to them and with them that we wish to BE REBORN, like the phoenix rising from its ashes. The base of Irpinia Spumante "Rinascita" DOC is 100% Fiano, obtained by lightly pressing the whole bunches, yielding 50% of the free-run must, which is then statically decanted. Selected yeasts are added, triggering the first alcoholic fermentation in steel tanks for approximately 20 days at a controlled temperature of 12-14°C. This is followed by the second fermentation, the so-called refermentation in the bottle, which lasts 36 months.

Winemaking technique The 100% Fiano sparkling base is obtained from a
Light pressing of the whole bunches yields 50% of the free-run must, which is then statically decanted. Selected yeasts are added to initiate the first alcoholic fermentation in steel tanks for approximately 20 days at a controlled temperature of 12-14°C. The wine then ages on the fine lees for at least 6 months.
Disgorgement After 36 months of ageing on the lees in the bottle
Straw yellow color with greenish reflections; fascinating with its fine and persistent perlage

Aroma: Typical aromas of the Fiano grape variety such as ripe yellow fruit, citrus nuances and notes of white flowers, all enriched by the aromas of almond and bread crust.
On the palate, it is fine, fresh, and perfectly balanced with the softness. The sip is intense and persistent.
