OENOLOGICAL INFORMATION: Fermentation tank material: 316 stainless steel; Fermentation temperature: 15°C. Duration of fermentation: 15 days. Method and duration of refermentation and Secondary fermentation: Charmat method (Martinotti ) 4 months of refermentation at approximately 5 Bar of pressure in an autoclave after the addition of new yeasts. Residual sugar: 4gr/l (Brut) oenological operations for product stabilization: clarification, refrigeration followed by filtration.
ORGANOLEPTIC PROFILE: This variety produces intense and aromatic wines, with deep aromas of white fruit, pineapple, peach, and apple that fade into a second tone with a floral and citrus touch, toned by aromas of honey and freshly cut grass. The sparkling version presents itself with a lively and persistent bubble, delicate on the palate and easy to drink. Crystalline and very bright in color, with hints of citrus and white flowers.
