OENOLOGICAL INFORMATION: Fermentation tank material: 316 stainless steel. Fermentation temperature: 15°C; Duration of fermentation: 15 days; Method and duration of pre-bottling refinement: 5 months of storage in tank; oenological operations for product stabilization: clarification, refrigeration followed by filtration.
ORGANOLEPTIC PROFILE: This variety produces intense and aromatic wines, with deep aromas of white fruit, pineapple, peach, and apple that fade into a second tone with a floral and citrus touch, toned by aromas of honey and freshly cut grass. After two years of maturation, the raisin and menthol aromas enter the olfactory profile, from dried white fruits to apricots and anise. On contact with the palate, the wine is dense, with a soft extract with notes of freshness and flavor that leave a pleasant aromatic sensation. The wines produced with Falanghina are supported by a good medium-low acid structure, which allows for long maturations.
Uncorked at a temperature of 10°C, it pairs well with tuna mousse, octopus salad, spaghetti with seafood, baked or crazy water fish and vegetables.
