Description
The grapes come from spurred cordon vines of 20-30 years. It has medium-sized bunches and spherical berries of very intense color, pulp rich in mineral substances and sugars (23-25%), thin skins with a high concentration of anthocyanins and tannins.
Winemaking
The grapes, harvested manually around the second ten days of October, are immediately transported to the cellar in 18 kg boxes and destemmed. The fermentation, grafted with native yeasts selected in the vineyard, takes place at a constant temperature of about 27°- 28° for 15 days. Maceration on the skins lasts about 15 days. Once the racking has taken place, 50% of the wine is stored in 25 hl oak barrels, while the remainder continues to refine in steel. Malolactic fermentation starts spontaneously and lasts 15 days. The wine assembled in steel is bottled in March without the aid of filtration. The alcohol content varies between 13.5 and 14% alcohol.
Tasting
Wine with an intense ruby red color, consistent although quite transparent. On the nose it is rich and persistent with hints of ripe fruit, and light balsamic and spicy notes. On the palate it appears warm, with austere tannins, and with a certain persistence.
