OENOLOGICAL INFORMATION: Fermentation tanks material: 316 stainless steel. Preparation and duration of fermentation: skin maceration at a temperature of 5° for 48 hours, followed by fermentation of the must for 20 days; Fermentation temperatures: 15°C. Method and duration of pre-bottling refinement: 5 months of storage in tanks. Oenological operations for product stabilization: clarification, refrigeration followed by filtration.
ORGANOLEPTIC PROFILE : Our Signifer is a robust Fiano with great aromatic finesse. The color is straw yellow; the aroma is intense, pleasant and characteristic, with distinct notes of hazelnut and floral sensations; on the palate it is dry and fresh on a slightly acidic vein. The note that returns most frequently both on the nose and on the palate is dried fruit, in particular toasted hazelnuts.
