The Spumante Brut Metodo Classico from Cantina Le Masciare is an organic sparkling wine to be savored.

NAME:
Fiano Sparkling Wine, Irpinia Controlled Designation of Origin (DOC). Brut.
GRAPE VARIETY:
Fiano (100%)
PRODUCTION AREA:
Lapio (AV), Italy
VINEYARDS:
The grapes are grown using the Guyot trellis system on volcanic soil rich in
minerals at an altitude of about 650m above sea level in the hills of Lapio.
HARVEST :
The hand harvest is done towards the end of September, generally 2-3 weeks before the harvest of the grapes for Fiano di Avellino DOCG.
VINIFICATION :
The grapes are placed in a tank for 12 hours at a temperature of 10°C, and then slowly pressed. This phase is followed by a 15-day fermentation at a controlled temperature of 18°C ​​in steel.
MATURATION :
In stainless steel tanks until the end of the spring following the harvest, when it is bottled where refermentation is induced. The wine remains another 15 months in the bottle before being disgorged, according to the classic method.
ORGANOLEPTIC CHARACTERISTICS:
The color is golden yellow, its scent is slightly mineral with notes of apricot, pear, peach and citrus, with excellent acidity. The fruit tones remain in the background with a slightly bitter aftertaste, reminiscent of almonds. Excellent persistence of the perlage thanks to the long refermentation in the bottle.
FOOD PAIRINGS:
Very versatile sparkling wine, therefore excellent as an aperitif, accompanying raw seafood, legume soups, appetizers and fish dishes, seafood or porcini mushroom risotto, white meats, fresh cheeses and vegetable dishes.
SERVING TEMPERATURE:
It should be served at a temperature of around 8-10°C
