IrpiniaCoda di Volpe "Caporaballo"DOC is one of the most popular wines, not only regionally but also nationally. It owes its name to the distinctive characteristics of the grape from which it is produced, the "coda di volpe" (fox tail), a particular type of grape with clusters arranged in a way that resembles a fox's tail. " Caporaballo " is an organic wine.

- Plant density: 4,000 plants/ha – Average age of the vineyard 5 years.
- Soil: Vineyards located at 500 m above sea level. Clayey, calcareous, sandstone soil rich in volcanic deposits.
- Company management : Organic for 20 years. The ultimate expression of its local area.
- Harvest: Grapes are vigorously hand-picked with the utmost care in small 20 kg crates.
- Harvest period : Early October.
- Vinification: 10/12 days in steel tanks.
- Maturation: A 6-month stay in steel tanks on fine lees.
- Color: Straw yellow.
- Aroma: It has a very delicate, floral, and fruity aroma, reminiscent of freshly picked fruit. The aromas are fresh and elegant. Good persistence and intensity.
- Taste: On the palate, it is savory and fresh. It has a strong citrus and quince note, and is very soft and fresh on the palate. It is dry, with good acidity and hints of spice.
- Pairing: Seafood appetizers, delicate fish-based first courses, white meat dishes and medium-aged cheeses.
