Fiano di Avellino Neviera di Sopra by Rocca del Principe is a CRU wine that originates in Lapio in the Neviera district at 570 meters above sea level. Neviera is the coldest district that experiences the greatest temperature range, compared to other areas of the municipality of Lapio, characterizing grapes that give the wine freshness, elegance, complexity and longevity. Neviera di Sopra is a wine produced in small quantities and takes its name from the historic district where, in the Renaissance period, given its particular exposure to the North, snow was preserved in a special well until the following summer, in the form of ice. Vinification: Maceration with the skins for approximately 15 hours, decanting of the free-run must and maceration with its own lees for 6 days at a controlled temperature of 8 degrees.
Alcoholic fermentation: 80% in steel tanks and 20% in barriques at a controlled temperature of 12/14 degrees for approximately 40 days.
Aging: In steel and barrique for 8 months on the fine lees. In bottle for approximately 2 years
