The name coined by local winemakers is linked to the more famous “Greco” vine, even if it has no kinship with it. It has simply been used for a long time as a blending grape for Greco. Rovello Bianco has a large but sparse bunch and the grape has the singular characteristic that the skin grows out of proportion with respect to the internal pulp and thus generates the unmistakable appearance of flaccid grapes, “Grecomusc'” precisely. This generates a solid/liquid ratio to the detriment of the latter, and generates vinification conditions with a low liquid yield. The Giardino winery vinifies the “Primo Aprile” Rovello Bianco in a natural way.

Vinification: Maceration on the skins for 8 days, hand pressing with a vertical wooden press, spontaneous alcoholic fermentation with the use of indigenous yeasts in chestnut, acacia and Slovenian oak barrels made from local woods. No clarification or filtration before bottling
Aging: 8 months in chestnut barrels and 3 months in bottle
