Concentrated dark ruby color when young, with more garnet reflections over the years, the nose offers a broad bouquet of cherry, plums and black cherry; with spicy notes of violet, black pepper and tobacco. The taste is full with balanced tannins and a good aromatic persistence. It accompanies the best roasts, game and slightly spicy dishes. It pairs very well with mature cheeses and truffles.
Limited production: 6,667 bottles, produced only in the best years.
Grapes : Aglianico (100%)
PRODUCTION AREA: Paternopoli (AV), Italy
VINEYARDS : 3 hectares of Aglianico grapes grown on espalier with spurred cordon on clayey and calcareous soil
HARVEST : The harvest is done by hand between the end of October and the beginning of November, selecting only the best grapes.
VINIFICATION: Pre-fermentation maceration of the grapes at cold temperatures for about 2 days, followed by fermentation. Fermentation takes place in stainless steel tanks at a controlled temperature for about 15-16 days.
MATURATION : In stainless steel tanks for approximately 18 months, then for at least 12 months in French oak barrels. It is refined in the bottle for at least 1 year. Its remarkable structure makes it extremely long-lived.
