The Cantina Perillo di Michele Perillo is a small company that manages five hectares of vineyards in the municipalities of Castelfranci and Montemarano. vineyards located on high hills , between 600 and 700 meters above sea level, are planted radially and some are very old and ungrafted. Being planted on significant slopes, the vineyard enjoys excellent exposure.

The soils, rich in skeleton and silica, are characterised by a particular clayey-calcareous concentration and sandy. The climate is continental, with often very cold winters and hot but never torrid summers. There are notable temperature variations between night and day, as well as between seasons. In hot years the temperature excursions safeguard aromas and acidity . In rainy ones, the dry and ventilated climate excludes problems related to mold and rot.

The work is done manually, even if the green interventions are few, given the low bud load left during pruning. The Aglianico used to make Taurasi in this area is called horsetail, due to the characteristics of the loose and elongated bunch and the presence of very small grapes , with a high skin-pulp ratio. The yields are ultimately very low, not exceeding 30 quintals per hectare . The harvest period is usually in November.

Aglianico, grape variety very rich in polyphenols, it generates a bluish must giving life to extremely concentrated wines. After alcoholic fermentation, the wine that will become Taurasi spends about 20 months in barriques and 20 hl barrels. In favorable years, the Riserva is also produced, with a more important wooden passage and further refinement in the bottle.

Perillo's Taurasi DOCG thus becomes a powerful wine, rich in extracts and of great depth of flavour. And they require time and patience to tame the extraordinary and aggressive tannic charge.
