The Irpinia Coda di Volpe "Nonna Volpe" DOC by Rocca del Principe is dedicated to the grandmother and is vinified in one of the most suitable areas, Irpinia. A splendid hilly territory, characterized by particularly rich, intense and fruity wines. Coda di Volpe is an ancient vineyard in Irpinia that was previously used for blending with Greco di Tufo; today both wines are vinified in purity.
The Irpinia Coda di Volpe "Nonna Volpe" DOC by Rocca del Principe is made with Coda di Volpe grapes coming exclusively from the company's own vineyards. An old vineyard brought back to life a few years ago by the Rocca del Principe winery. The Irpinia Coda di Volpe "Nonna Volpe" DOC presents itself: Straw yellow color with golden reflections; the nose has hints of white fruit and aromatic herbs with a prevalence of chamomile. Dry on the palate with nice freshness and flavors of ripe fruit with good persistence.

Fermentation: a short cryomaceration process in which the clarified must is first fermented in purity at around 12°C for a period of thirty days to obtain a strong floral note.
