Irpinia Spumante "Ripa Bassa" DOC classic method produced with Fiano and Greco grapes in different percentages depending on the year. The grapes come from vineyards in the lower area of the Irpinia hills located along the banks of the Sabato river that crosses both the Fiano and Greco lands. It rests twenty-four months on the yeasts. The entire production cycle of this precious sparkling wine takes place in the company under our continuous control.

First vintage 2009.
Origin of the grapes San Michele di Serino, Altavilla Irpina (Avellino)
Altitude 250 m above sea level for the Fiano vineyards and 550 m above sea level for the Greco vineyards
Guyot training system
Density 4000 – 5000 vines/ha
Grape yield 50 q/ha
Soil characteristics: sandy loam, clayey calcareous
with volcanic ash for the Fiano and sandy silt with veins of dark clay for the Greco
Harvest last week of August
Vinification: static decantation of the must after soft pressing of the whole bunches; inoculation with selected yeasts on the clear, fermentation and refinement in steel. Secondary fermentation in the bottle according to the classic method

Disgorgement after a minimum of 24 months of ageing on the lees in the bottle
Pale yellow colour with hints of greenish reflections, a colour made even more fascinating by its fine and persistent perlage.
Austere and gentle nose . Aromas of fresh baked bread crust, ripe white melon and white peach; followed by mineral and menthol sensations, the aromatic picture is completed by the sweet note of white chocolate and a smoky finish
Palate the palate is fine, very fresh with perfectly integrated bubbles. Not too voluminous but full and unexpectedly soft. A nice acidity enhances its freshness. Unpredictable finish for the return of dense floral notes
Recommended pairings: ideal with seafood first courses, with shellfish and also with light legume-based soups or fish soups.
Dishes to pair: pasta with piennolo cherry tomatoes; raw tuna with celery sauce; naked scampi with asparagus sauce; semi-seared scallop with lemon
